– 880g Shin of Beef, diced
– 2 Carrots, cubed
– 1 Onion, roughly chopped
– 2 Garlic Cloves, crushed
– 300ml Red Wine
– 600g Tomato Passata
– 2tbsp Olive Oil
– 1tsp Oregano
– 1 Sprig of Thyme
– Salt & Pepper
Place your chopped carrots, onion and garlic in the slow cooker, and drizzle over the olive oil.
Panfry your diced beef to seal in the flavour then place that in your slow cooker on top of the veggies to keep it super juicy.
Pour the passata and red wine over the mix. Finally, sprinkle your oregano, salt and pepper over.
Turn your slow cooker to low heat and cook for 6 – 9 hours, or turn your slow cooker on to a high heat and cook for 4 – 5 hours. Stir occasionally if possible.
Serve with freshly cooked tagliatelle, crisp rocket and a sprinkling of parmesan for a truly Italian supper.
